Skewered Chicken Topopo Salads

This Mexican-style salad has origins in Arizona, where substantial salads—towering mounds (“topopo” means volcano) of shredded lettuce, tossed with shredded meat and vegetables—are welcome fare during the months when it’s too hot to think about eating heavy food.

Ingredients 

CHICKEN
1/4 cup olive oil
1 tablespoon honey
1 lime, zest removed, juiced
1 pound Gold'n Plump® Boneless Skinless Chicken Breast Tenders
1-1/2 teaspoons chipotle chili powder
1/2 teaspoon ground cumin
4 long bamboo skewers
SALAD
6 cups shredded Romaine or green leaf lettuce
1 cup cherry tomatoes, halved
3/4 cup cooked pinto beans
1 can (2.25 ounces) sliced ripe olives, drained
Fresh cilantro leaves, if desired

Instructions 

Heat grill to high heat or oven to 400°F.

Whisk together oil, honey, lime zest, and lime juice in a small bowl. Reserve 1/3 cup dressing to toss with salad.

Brush remaining dressing mixture on chicken. Season with chili powder and cumin. Thread chicken onto bamboo skewers.

Grill chicken about 10 minutes, turning once, until no longer pink in center or bake for 8 to 10 minutes.

Meanwhile, combine all salad ingredients in large bowl; toss with reserved dressing. Serve with skewered chicken.

Tips 

If you soak bamboo skewers in water for about 20 minutes, they’ll be less likely to burn on the grill or in the oven.

Variations 

Gold'n Plump® Boneless Skinless Chicken Breasts, cut into strips, may be substituted for chicken tenders.
