Lemony Spiced Chicken & Grape Skewers

These easy kabobs celebrate the sweet goodness of pairing chicken with fruit. The flavor of the grapes concentrates when roasted on the grill with chunks of tender spiced chicken.

Ingredients 

1 tablespoon olive oil
1 lemon, zest grated & juiced
3 cloves garlic, finely chopped
1 teaspoon ground cumin
1/2 teaspoon ground coriander
Salt and freshly ground pepper to taste
2 to 3 (1 pound) Gold'n Plump® Boneless Skinless Chicken Breasts, cut into 3/4-inch pieces
1 cup large red and/or green seedless grapes
Fresh lemon wedges, if desired

Instructions 

Whisk the oil, lemon zest, lemon juice, garlic, cumin, coriander, salt, and pepper together in a medium bowl. Add the chicken; toss to coat. Marinate at room temperature for 20 minutes.

Meanwhile, heat grill to medium heat; spray the grates with olive oil cooking spray or lightly brush with oil.

Alternately thread pieces of chicken and grapes onto metal or bamboo skewers. Grill the skewers 6 to 8 minutes, turning once, until chicken is no longer pink in center. Serve with lemon.

Tips 

Whip up an easy dipping sauce of plain yogurt (Greek-style yogurt is nice), grated lemon zest, chopped fresh mint, and a sprinkle of garlic salt.

Try grilling fresh summer melon, like cantaloupe or honeydew, in place of the grapes. Either cut the melon into chunks or use a melon baller.

Variations 

Gold'n Plump® Boneless Skinless Chicken Thighs (increase grilling time to 15 minutes), Tenders or Seasoned Lemon Pepper Breasts may be substituted for Gold'n Plump® Boneless Skinless Chicken Breasts.
