Crunchy Southwestern Chicken Snack

Here’s a quick-to-prepare snack to please the kids, complete with the flavors and textures they love.

Ingredients 

1 tablespoon olive oil
3 to 4 (1 pound) Gold'n Plump® Boneless Skinless Chicken Breasts, cut into strips
1/3 cup salsa
1/2 cup fat-free sour cream
1 cup finely shredded lettuce
1/2 cup finely shredded cheddar cheese
4 individual bags of nacho cheese or corn tortilla chips, crushed

Instructions 

Heat oil in large skillet over medium-high heat. Add chicken; cook, stirring occasionally, for about 5 to 6 minutes. Stir in salsa. Continue to cook for about 5 to 6 more minutes or until chicken is lightly browned and thoroughly cooked.

Remove from heat; stir in sour cream

Spoon chicken mixture onto warm serving platter. Top with lettuce, cheese, and tortilla chips.
