Tomato Basil Salad with Grilled Chicken & Parmesan Breadcrumbs

Serve this hearty salad with plenty of crusty Italian bread and olive oil for dipping.

Ingredients 

4 (24 ounces) Gold'n PlumpĀ® Boneless Skinless Chicken Breasts
1 tablespoon olive oil
1/2 cup fine dry Italian flavored or plain breadcrumbs
1/4 cup finely grated Parmesan cheese
8 cups torn romaine lettuce
1 cup halved grape tomatoes
1 cup thinly sliced seedless cucumber
4 slices red onion, cut in half and separated
1/2 cup Italian salad dressing

Instructions 

Cook chicken on grill according to the package directions. Cool slightly, then cut into thin slices and set aside.

Heat oil in a medium skillet over medium-high heat. Stir in breadcrumbs. Cook for 2 to 3 minutes, stirring constantly, or until lightly browned. Stir in Parmesan cheese. Cook for 30 seconds to 1 minute, stirring constantly, or until crumbs are browned. Remove from heat and set aside.

On each of 4 large plates, arrange 2 cups lettuce, 1/4 cup tomatoes, 1/4 cup cucumber, and 1/4 of onion. Top with 1 sliced chicken breast. Sprinkle with 1/4th of breadcrumb mixture and drizzle with 2 tablespoons salad dressing.
