Spring Time Chopped Chicken Salad

Invite friends over for an outdoor lunch. Set a pretty table, use good dishes, and add fresh flowers. The salad is wonderful served with warm mini croissants.

Ingredients 

1/2 Gold'n Plump® Deli Rotisserie Chicken, meat removed and coarsely chopped (about 2 cups)
1/2 cup coarsely chopped celery
1/4 cup finely chopped green onions, plus 1 tablespoon
1 teaspoon freshly grated lemon peel
1/4 cup mayonnaise
1/4 cup sour cream
1/4 teaspoon garlic salt
1/4 teaspoon coarse ground pepper
4 cups mixed lettuce leaves
1/2 cup blanched asparagus tips
2 hard cooked eggs, finely chopped
1/4 cup crumbled bleu cheese

Instructions 

Stir together chicken, celery, 1/4 cup of green onions, lemon peel, mayonnaise, sour cream, garlic salt, and pepper in a medium bowl.

Line individual serving plates with lettuce and top with about 1/2 cup of chicken mixture. Sprinkle each with asparagus, hard cooked egg, bleu cheese, and remaining 1 tablespoon of green onions.

Tips 

One Gold'n Plump Deli Rotisserie Chicken yields about 4 cups shredded, sliced, or coarsely chopped chicken, skin and bones removed.

Variations 

Any flavor of Gold’n Plump® Deli Rotisserie Chicken may be used.
