Smoky Chicken, Rice & Vegetable Soup

Chipotle powder is what gives this hearty, creamy soup its smoky flavor and kick. It is made from dried chipotle chiles and smoked jalapeno peppers. Find it in the spice section of the grocery store.

Ingredients 

4 cups milk
1-1/2 cups (6 ounces) shredded American cheese
1/2 Gold'n Plump® Deli Rotisserie Chicken, meat removed and chopped (about 2 cups)
1-1/2 cups cooked brown or white rice
2 tablespoons instant minced onion
3/4 teaspoon chipotle powder or 1/2 teaspoon chili powder
1 bag (1 pound) frozen broccoli florets, cauliflower, and carrots, thawed

Instructions 

Stir together milk, cheese, chicken, rice, onion, and chipotle powder in a large saucepan.

Cook, stirring frequently, over low heat about 10 minutes or until very hot. Stir in vegetables. Cook for 5 more minutes or until the vegetables are heated through.

Tips 

1 Gold'n Plump Deli Rotisserie Chicken yields about 4 cups shredded, sliced, or coarsely chopped chicken, skin and bones removed.

Variations 

Any flavor of Gold’n Plump® Deli Rotisserie Chicken may be used.
