Shepherd's Pie

This hearty, one-dish meal will please young and old alike.

Ingredients 

6 cups thick white sauce
1 Gold'n Plump® Deli Rotisserie Chicken, meat removed and shredded (about 4 cups)
3/4 cups finely chopped onion
1 bag (16 ounces) frozen peas and carrots
6 cups warm mashed potatoes

Instructions 

Heat oven to 375ºF. Spray a half-steamer pan with nonstick cooking spray, set aside. In large saucepan over medium-high heat, heat sauce and chicken for 5 to 6 minutes, stirring frequently. Add onion, peas and carrots, mix well.

Spoon mixture into steamer pan. Spoon potatoes over the chicken mixture, spreading to the edges of the pan and covering all of the filling.

Bake for 45 to 50 minutes, or until golden brown on top and bubbling on the edges. Let stand for 10 minutes before serving.

Tips 

1 Gold'n Plump Deli Rotisserie Chicken yields about 4 cups shredded, sliced, or coarsely chopped chicken, skin and bones removed.

Variations 

White sauce can be prepared using packaged dry white sauce mix with milk.

Instant mashed potatoes made with milk and chicken broth can be substituted for prepared mashed potatoes.

Any flavor of Gold’n Plump® Deli Rotisserie Chicken may be used.
