Salsa Drumsticks with Black Beans

These drumsticks are a wonderful main course option for the family with their authentic Mexican flavor.

Ingredients 

2 cans (15 ounces each) black beans, drained
1 jar (16 ounces) salsa
1/3 cup cornmeal
2 teaspoons ground cumin
1/2 teaspoon salt
1/2 teaspoon pepper
10 to 14 (3-1/2 pounds) Gold'n Plump® Chicken Drumsticks
1/3 cup coarsely chopped fresh cilantro or flat-leaf parsley for garnish

Instructions 

Preheat oven to 375°F. Lightly coat 13" x 9" baking pan with cooking spray.

Stir together beans and salsa in medium bowl. Spread evenly in baking pan.

Combine cornmeal, cumin, salt, and pepper in a zip-seal plastic bag. Add 4 chicken legs at a time; turn bag to coat chicken evenly.

Arrange chicken in a single layer over bean mixture.

Bake for 50-55 minutes or until chicken is lightly browned and thoroughly cooked.

Garnish servings with cilantro or parsley.

Fresh fruit, such as juicy pineapple and sweet mango slices splashed with fresh lime juice, pairs nicely with this zesty chicken dish.
