Mediterranean Foil Pack

Ingredients 

1 package frozen Gold’n Boneless Skinless Chicken Breast Pieces for Stir-Fry

4 medium red skin gold potatoes, cut in to 1-inch pieces

4 ounces fresh green beans cut in to 1-inch pieces

1 large shallot, thinly sliced

3 tablespoons olive oil

1/8 teaspoon ground black pepper

1 tablespoon fresh chopped parsley

1/4 cup grated Parmesan cheese

Instructions 

Prepare gas or charcoal grill.

Prepare 4 (12x12-inch) foil squares by spraying top side with cooking spray.

In medium bowl, combine potatoes, green beans, shallot, olive oil and black pepper until evenly coated.

Divide vegetable mixture evenly in the center of each foil square. Divide chicken evenly over vegetables.

Bring 2 opposing edges of the foil square together; make several narrow, tight folds to secure. Fold remaining sides individually to make a flat foil packs.

Place prepared packs on grill over medium heat. Cover and cook for 8-10 minutes. Rotate each pack 1/2 turn, and continue cooking for an additional 8-10 minutes or until potatoes are tender and chicken pieces reach an internal temperature of 165° F.

Remove packs from grill and carefully open the center portion. (CAUTION: STEAM). Garnish with chopped parsley and grated Parmesan cheese. Serve.
