Italian Chicken Legs with Spinach Fettuccine

A hearty tomato sauce and spinach fettuccine make this a colorful and tasty Italian dish.

Ingredients 

1 tablespoon olive oil
5 to 8 (24 ounces) Gold'n Plump® Chicken Drumsticks
1/2 teaspoon salt
1/2 teaspoon pepper
1 can (14-1/2 ounces) Italian-style stewed tomatoes
1 tablespoon fresh oregano, minced or 1/2 teaspoon dried oregano
1/4 teaspoon red pepper flakes
8 ounces spinach fettuccine

Instructions 

Bring large pot of water to a boil over high heat.

Meanwhile, heat oil in large skillet over medium-high heat. Add chicken and sprinkle with salt and pepper. Cook, turning occasionally, for about 4 to 5 minutes or until chicken is lightly browned but not thoroughly cooked.

Stir together tomatoes, oregano, and red pepper flakes in small bowl; pour over chicken. When liquid comes to a boil, reduce heat to medium. Cover and simmer, stirring occasionally, for about 20 to 25 minutes or until sauce is slightly thickened and chicken is thoroughly cooked.

Meanwhile, cook fettuccine in pot of water according to package instructions

Serve drumsticks and tomato sauce over fettuccine.

Tips 

Accompany this dish with assorted greens tossed with Italian dressing and warm, crusty artisan bread.

 

Variations 

Add more red pepper flakes if you’d like a zestier tomato sauce.
