Grilled Italian Chicken Wraps

These wraps of chicken, zucchini, and summer squash are a healthy meal even the kids will love.

Ingredients 

3/4 cup bottled Italian dressing, divided
1 pound Gold'n Plump® Boneless Skinless Chicken Breast Tenders
1 zucchini, halved crosswise, each half cut into 4 lengthwise strips
1 summer squash, halved crosswise, each half cut into 4 lengthwise strips
1 medium onion, cut into 1/4-inch slices
4 (10-inch) flour tortillas

Instructions 

Pour dressing into a zip-seal bag. Add chicken, zucchini, summer squash, and onion; seal bag. Refrigerate, turning bag occasionally, for at least 30 minutes or for up to 24 hours.

When you are ready to cook, prepare grill. Position grill rack about 6 inches above coals. Place a grill basket or small-holed rack over coals.

Remove chicken and vegetables from bag; discard dressing.

When coals are glowing, put chicken and vegetables in grill basket or small-holed rack. Grill, turning chicken and vegetables occasionally, for about 10 to 12 minutes or until chicken is lightly browned and thoroughly cooked. (The vegetables will also be lightly browned on the edges.)

Transfer chicken and vegetables to bowl; cover to keep warm.

Stack tortillas and place them between 2 damp heavy-weight paper towels. Microwave on high for about 30 seconds or until tortillas are warm and pliable. (To heat tortillas in oven, wrap them in aluminum foil and place in a preheated 350°F oven for about 10 minutes while chicken and vegetables are cooking.)

Serve chicken and vegetables in bowl family-style or assemble sandwiches by spooning about one-fourth of chicken mixture into center of a tortilla. Fold right and left sides of tortilla inward toward center and over the filling; next fold bottom edge upward toward center and then firmly roll the tortilla away from you until it completely wraps the filling.

Tips 

For grilling, you’ll need a grill basket or small-holed grill rack, which will prevent the chicken and vegetables from falling onto the hot coals. Serve assembled or let people fill their own.
