Garlic Chicken & Curry Couscous

To complete the meal, serve with melon cubes sprinkled with fresh lime peel.

Ingredients 

2 tablespoons butter
1 cup peeled, cored, finely chopped apple (about 1 medium apple)
1/2 cup finely chopped onion
1 tablespoon curry powder
1 teaspoon minced garlic
3-1/2 cups low fat reduced sodium chicken broth
1/2 teaspoon salt
1/4 teaspoon coarse ground pepper
1/2 Gold'n Plump® Deli Rotisserie Chicken, meat removed and coarsely chopped (about 2 cups)
1/2 cup golden raisins
1-1/2 cups couscous
1/2 cup coarsely chopped cashews or peanuts
2 tablespoons finely chopped chives

Instructions 

Melt butter in a Dutch oven or a 12-inch skillet over medium-high heat. Add apple, onions, curry powder, and garlic. Cook 4 to 5 minutes, stirring frequently, until onions and apple are hot.

Carefully stir in broth, salt, and pepper. Bring to a boil. Stir in chicken, golden raisins, and couscous. Cover and remove from heat. Let stand 5 to 6 minutes until all moisture is absorbed. Stir well before serving. Serve with cashews and chives.

Tips 

1 Gold'n Plump Deli Rotisserie Chicken yields about 4 cups shredded, sliced, or coarsely chopped chicken, skin and bones removed.
