Fruity Wild Rice Chicken Spinach Salad

Ingredients 

Salad

4 cups cooked wild rice

2 cups chopped fresh spinach

4 strips bacon, cooked and crumbled

2 tablespoons each minced: fresh basil and fresh mint

1 cup quartered strawberries

1/2 cup mandarin oranges

1 cup peeled and cubed ripe avocado

2 Gold’n Plump® Seasoned Boneless Skinless Chicken Breast Fillets, Lemon Pepper, cooked and cubed

1/3 cup shredded Swiss cheese

Dressing (whisk together; chill):
1/3 cup canola oil 

1/3 cup orange juice 

1/3 cup raspberry vinegar

Instructions 

In large bowl, combine wild rice, spinach, bacon, basil, and mint. Top
with remaining ingredients. Add dressing; gently toss.
