Chili Chicken Soup with Crispy Tortilla Strips

Try this express version of chicken tortilla soup on a busy weeknight—the rich flavor of a rotisserie chicken adds wonderful taste without any work.

Ingredients 

2 tablespoons olive oil
1/2 cup chopped onion
1 medium zucchini, chopped
3 cloves garlic, finely chopped
1 quart low-sodium chicken broth
1 cup spicy tomato salsa
1/2 Gold'n Plump® Deli Rotisserie Chicken, meat removed and shredded (about 2 cups)
1/2 teaspoon chili powder
4 (6-inch) corn tortillas, cut into thin strips
Fresh cilantro leaves and chopped avocado, if desired

Instructions 

Heat 1 tablespoon oil in large saucepan or soup kettle over medium-high heat. Sauté onion, zucchini, and garlic 4 minutes or until tender.

Stir in broth, salsa, chicken, and chili powder. Reduce heat to low; partially cover and simmer 15 minutes.

Meanwhile, heat remaining 1 tablespoon oil in large skillet over medium-high heat. Add tortilla strips and chili powder; cook and stir about 8 minutes or until crisp and golden.

Serve soup topped with tortilla strips, cilantro, and avocado.

Tips 

1 Gold'n Plump Deli Rotisserie Chicken yields about 4 cups shredded, sliced, or coarsely chopped chicken, skin and bones removed.

If you’d prefer, toss the tortilla strips with oil and chile powder, then toast in a 375°F oven while the soup simmers.
