Chicken with Vegetable Orzo Pilaf

Orzo is rice-shaped pasta and is found in the dry packaged pasta section of the grocery store.

Ingredients 

4 (24 ounces) Gold'n Plump® Boneless Skinless Chicken Breasts
1 tablespoon olive oil
2 carrots, thinly sliced
1 medium zucchini, quartered lengthwise and cut into 1/2” pieces
1 medium onion, chopped
1-1/4 cups uncooked orzo
1/4 teaspoon dried thyme leaves
1 can (14 ounces) chicken broth
1/2 cup grated Parmesan cheese

Instructions 

Cook chicken on stove-top in a large non-stick skillet according to package directions. Remove chicken from skillet and set aside.

Heat oil in same skillet over medium heat. Add carrots, zucchini, and onion. Cook for 2 minutes, stirring frequently, or until onion is just tender. Stir in orzo, thyme, and chicken broth. Place chicken on top of the orzo mixture and bring to a boil over high heat.

Cover; reduce heat to low, and simmer for 15 minutes or until orzo is tender. Remove chicken from the skillet. Stir Parmesan cheese into orzo mixture.

Serve chicken with orzo pilaf.
