Chicken, Tomato, & Cucumber Grilled Bread Salad

This classic salad is best eaten right after it’s made. Make it in the summer when tomatoes, cucumbers, and basil are at their absolute best.

Ingredients 

1/2 pound country bread, cut into 3/4-inch slices
1/4 cup plus 3 tablespooons extra-virgin olive oil
1/2 Gold'n Plump® Deli Rotisserie Chicken, meat removed and chopped (about 2 cups)
3 large tomatoes, cut into 3/4-inch pieces (4 cups)
1 cucumber, peeled and cut into 3/4-inch pieces (2 cups)
1/2 cup firmly packed fresh basil leaves, torn into bite-sized pieces
2 tablespoons red wine vinegar
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper

Instructions 

Prepare grill for medium heat cooking. Position grill rack about 6 inches from heat source.

Brush both sides of bread with 3 tablespoons of olive oil. Grill for 3 to 4 minutes until lightly charred on both sides. Let bread cool slightly, then cut into 3/4-inch pieces.

Lightly toss together bread pieces, chicken, tomatoes, cucumber, and basil in a large bowl. Drizzle with remaining 1/4 cup olive oil and vinegar and sprinkle with salt and pepper. Toss again just until blended. Serve immediately.

Tips 

1 Gold'n Plump Deli Rotisserie Chicken yields about 4 cups shredded, sliced, or coarsely chopped chicken, skin and bones removed.

Variations 

Any flavor of Gold’n Plump® Deli Rotisserie Chicken may be used.
