Chicken Tacos with Fresh Pineapple Coleslaw

This is a super-fast, family pleasing recipe that is loaded with flavor and crunch! Find broccoli coleslaw, packed with nutrients, pre-packaged in the produce section of the grocery store.

Ingredients 

3 cups packaged broccoli coleslaw
1 cup coarsely chopped fresh pineapple
1/2 cup bottled coleslaw salad dressing
1/2 Gold'n Plump® Deli Rotisserie Chicken, meat removed and shredded (about 2 cups)
8 (7 or 8-inch) tortillas, heated*

Instructions 

Stir together broccoli coleslaw, pineapple, and salad dressing; let stand for 5 minutes.

Place chicken in a microwave-safe dish; cover and cook on high for 2 minutes or until heated through.

To serve, place 1/4 cup chicken and 1/3 cup coleslaw onto center of each tortilla and roll up.

Tips 

*Stack tortillas and place between 2 damp heavy-weight paper towels. Microwave on high for 45 seconds or until tortillas are warm and pliable. (To heat tortillas in oven, wrap in aluminum foil and place in a preheated 350°F oven for 10 minutes).

1 Gold'n Plump Deli Rotisserie Chicken yields about 4 cups shredded, sliced, or coarsely chopped chicken, skin and bones removed.

Variations 

1 (8 ounce) can of pineapple tidbits in juice, drained, may be substituted for fresh pineapple.

Any flavor of Gold’n Plump® Deli Rotisserie Chicken may be used.
