Chicken Kabobs with Tomato Soy Marinade

With chicken and veggies broiled together, these kabobs are nearly a meal in themselves, needing only a green salad and bread to complete.

Ingredients 

MARINADE
1/4 cup low-sodium soy sauce
1 tablespoon honey
1 tablespoon tomato paste
2 cloves garlic, minced
1/4 teaspoon pepper
TO COMPLETE RECIPE
2 to 3 (12 ounces) Gold'n Plump® Boneless Skinless Chicken Breasts, cut into 1-inch squares
1 can (8 ounces) pineapple chunks, canned in own juice
1 small zucchini, cut into twenty-four 1/4-inch slices

Instructions 

Combine all marinade ingredients in a zip-seal plastic bag. Add chicken and seal bag. Refrigerate at least 30 minutes or up to 24 hours, turning bag occasionally.

When ready to cook, position oven broiler rack 5 inches from heating element; preheat broiler. Lightly coat a baking sheet or broiler pan with cooking spray.

Thread chicken onto skewers, alternating with pineapple and zucchini. Place skewers on prepared pan; baste zucchini and pineapple with marinade. Set aside remaining marinade.

Broil for 4 minutes; turn and baste with marinade. Broil for 2 more minutes or until chicken is thoroughly cooked. (Test center pieces for doneness, since they take longest to cook.) Discard remaining marinade.

Tips 

You'll need four, 12-inch metal skewers to make these kabobs.

 

Variations 

1 teaspoon jarred minced garlic may be used in place of minced fresh garlic. Twenty-four, 1-inch cubes of fresh pineapple may be substituted for canned.
