Chicken & Fruit Salad

The sweetness of red grapes and spicy barbecue sauce provide a great counter to the crunch of chopped pecans in this creamy chicken salad.

Ingredients 

DRESSING
1 cup spicy barbecue sauce
1/2 cup sour cream
1/2 cup mayonnaise
1/3 cup milk
1 tablespoon honey
SALAD
1 box (16 ounces) bow tie pasta
4 cups coarsely chopped Gold'n Plump® Deli Rotisserie Chicken
2 cups chopped celery
2 cups red grapes
1 cup chopped onion
GARNISH
1 cup chopped pecans
1/4 cup chopped fresh parsley

Instructions 

In a medium bowl, stir together dressing ingredients; mix well.

Cook pasta as directed on package. Drain and rinse with cold water; drain well. In a large bowl, stir together cooked pasta and all remaining salad ingredients.

Spoon dressing over salad, gently mix. Spoon salad into serving bowl and sprinkle with pecans and parsley.

Tips 

One Gold'n Plump Deli Rotisserie Chicken yields about 4 cups shredded, sliced, or coarsely chopped chicken, skin and bones removed.

 

Variations 

Any flavor of Gold’n Plump® Deli Rotisserie Chicken may be used.
