Chicken Casserole with Dried Cherries & Golden Raisins

Made in a slow cooker, this easy festive holiday casserole is comforting, elegant, and welcoming guests with delicious aromas.

Ingredients 

1/2 cup uncooked wild rice
1 package (6 ounces) dried cherries and golden raisins
2 cups baby carrots
2 stalks celery, sliced
3/4 cup chopped onion
1 jar (4-1/2 ounces) sliced mushrooms, drained
1 cup chunky applesauce
1 teaspoon salt
10 to 12 (3-1/2 pounds) Gold'n Plump® Drumsticks
1 can (10-3/4 ounces) beefy mushroom soup
1 can (14 ounces) chicken broth
1-1/2 teaspoons dried thyme leaves
2 tablespoons grated orange rind
1 cup frozen peas

Instructions 

Lightly spray 6-quart slow cooker with non-stick cooking spray.

Mix wild rice, cherries and raisins, carrots, celery, onion, mushrooms, applesauce, and salt in slow cooker.

Arrange chicken pieces over rice mixture. Pour beefy mushroom soup over chicken; pour chicken broth over all. Sprinkle thyme on chicken.

Cover and cook on high setting for 4 to 6 hours or until wild rice is tender and chicken is done. To test for doneness, insert a meat thermometer into the meatiest part of the largest chicken piece, making sure not to touch the bone. The chicken is done when the thermometer reads 170°F.

During the last 10 minutes of cooking, sprinkle the chicken with the orange rind and peas.

Tips 

Because chicken skin doesn't brown in a slow cooker, removing it makes this dish more attractive. It'll also cut down on fat. When removing chicken skin, it helps to use a paper towel to hold the chicken.

 

Variations 

2 packages (1 pound, 8 ounces each) of Gold'n Plump® Thighs may be substituted for the Gold'n Plump® Chicken Drumsticks or use one package of each for extra variety. If you can't find the pre-packaged combination of dried cherries and golden raisins, use 1/2 cup of each instead.
