Chicken & Marinated Artichoke Relish

Take advantage of the full flavor of marinated artichokes to season a super-quick dish of sautéed chicken breasts. Add a crisp green salad and crusty bread to round out an express supper.

Ingredients 

1 jar (10 ounces) marinated artichoke hearts
2 tablespoons lemon juice
1/3 cup toasted pine nuts or slivered almonds
Crushed red pepper flakes to taste
Chopped fresh parsley, if desired
3 to 4 (1 pound) Gold'n Plump® Boneless Skinless Chicken Breasts

Instructions 

Drain and chop artichoke hearts, reserving marinade. Mix chopped artichokes with lemon juice and pine nuts in small bowl. Add pepper flakes and parsley as desired.

Pound chicken between 2 sheets of plastic wrap until evenly 1/4 inch thick. Pour reserved marinade into a large skillet over medium-high heat. Add chicken; sauté 6 to 8 minutes, turning once, until golden brown and firm.

Serve chicken with artichoke relish.
