Garlic Chicken & Tomato Soup

This tomato soup is filled with the rich taste of roasted garlic and fresh cilantro.

Ingredients 

2 tablespoons olive or vegetable oil
1 cup coarsely chopped onion
1 cup coarsely chopped celery
1 tablespoon jarred minced roasted garlic
6 cups chicken broth
2 cans (28 ounces each) crushed tomatoes
1 teaspoon salt
1 teaspoon pepper
2 cups uncooked fine egg noodles
1 Gold'n Plump® Deli Rotisserie Chicken, meat removed and coarsely chopped (about 4 cups)
1/2 cups chopped fresh cilantro

Instructions 

Heat the oil over medium-high heat in a stockpot. Add the onion, celery, and garlic. Cook 3 to 4 minutes, stirring frequently until onion is softened and celery is bright green.

Stir in the broth, tomatoes, salt, and pepper. Bring to a boil. Stir in the noodles, chicken, and cilantro. Reduce heat to medium. Cook 12 to 15 minutes or until the noodles are tender.

Tips 

1 Gold'n Plump Deli Rotisserie Chicken yields about 4 cups shredded, sliced, or coarsely chopped chicken, skin and bones removed.

Variations 

Any flavor of Gold’n Plump® Deli Rotisserie Chicken may be used.
