Cheesy Chicken & Broccoli Soup

Ingredients 

1 tablespoon canola or vegetable oil
1 pound Gold'n Plump® Boneless Skinless Chicken Breast Portions, cut into 1-inch pieces
2 tablespoons finely chopped onion
2 cans (14 ounces each) fat-free, low-sodium chicken broth
1 package (10 ounces) frozen chopped broccoli
3 tablespoons all-purpose flour
1/2 teaspoon mustard powder
1/4 teaspoon salt
1/4 teaspoon pepper
1 can (12 ounces) fat-free evaporated milk
2 cups coarsely shredded cheddar cheese

Instructions 

Heat oil in Dutch oven over medium-high heat. Add chicken and onion; cook, stirring occasionally, for 5 to 6 minutes or until chicken is lightly browned.

Stir in chicken broth and broccoli. When broth comes to a boil, reduce heat to medium; cover and simmer, about 5 minutes or until broccoli is tender and chicken is thoroughly cooked.

Meanwhile, combine flour, mustard powder, salt, and pepper in a small bowl. Add milk and whisk until smooth.

Pour milk mixture into Dutch oven. Cook, stirring constantly, for 4 to 5 minutes or until soup is slightly thickened.

Add cheese; stir constantly for 1 to 2 minutes or until cheese is melted.

Tips 

Serve topped with herbed garlic croutons. Accompany with a green salad dressed with a light vinaigrette to complete your menu.
