Garlic Chicken Melt
Serve this garden fresh chicken melt sandwich with a mix of cantaloupe and cherries.
2 cups coarsely chopped Gold'n Plump® Deli Rotisserie Chicken
1/4 cup mayonnaise
1/4 cup chopped green onions
1 tablespoon country-style Dijon mustard
1 teaspoon chopped roasted garlic
4 slices toasted dark rye bread
1/2 cup spinach leaves
1 medium tomato, thinly sliced
1 ball (4 ounces) fresh mozzarella, thinly sliced
Heat broiler. Stir together chicken, mayonnaise, green onions, mustard, and garlic; mix well. Spread about 1/2 cup of mixture on each slice of the toasted bread. Top with spinach, tomato and mozzarella.
Place sandwiches on broiler pan. Broil, 4 to 6-inches from heat, 6 to 9 minutes or until hot and cheese is melted and slightly browned.
One Gold'n Plump Deli Rotisserie Chicken yields about 4 cups shredded, sliced, or coarsely chopped chicken, skin and bones removed.
Fresh sliced mozzarella from the deli may be used.
