Chicken with Tomatoes, Apricots, & Chickpeas
A touch of North Africa flavors this savory-sweet combination of chicken with vegetables and dried fruit. A dusting of ground spices bumps up the already great flavored of the seasoned chicken fillets. Serve with some quick-cooking whole-wheat couscous or bulgur wheat pilaf.
1 tablespoon olive oil
4 (24 ounces) Gold'n Plump® Boneless Skinless Chicken Breasts - Tomato Basil Flavored
3 cloves garlic, finely chopped
1 can (14.5 ounces) fire-roasted diced tomatoes, undrained
1/3 cup chopped dried apricots or golden raisins
1 tablespoon honey
1 teaspoon dried ginger
1/4 teaspoon ground cumin or cinnamon
1 can (15 ounces) garbanzo beans (chickpeas), rinsed, drained
Chopped fresh cilantro
Heat oil in large skillet over medium-high heat. Add chicken and garlic; cook 6 minutes, turning once.*
Add tomatoes with juices, apricots, honey, ginger, and cumin to skillet. Bring to a boil; reduce heat to low. Cook, partially covered, about 5 minutes or until chicken is no longer pink in center. Stir in garbanzo beans. Serve sprinkled with cilantro.
*Or heat grill to medium-high heat. Place chicken on grill; cover. Cook 8 to 10 minutes, turning once, until no longer pink in center. Meanwhile, sauté garlic in olive oil in large skillet for 2 minutes. Stir in tomatoes with juices, apricots, honey, ginger, cumin, and garbanzo beans. Simmer about 5 minutes or until hot; serve with grilled chicken.
Butter and herb seasoned chicken breast fillets may be substituted for the tomato basil variety.
