Chicken BLT Grilled Cheese

The missing ingredient from this gooey high-protein take on a summer BLT is the lettuce. Serve a crisp green salad or some tart deli coleslaw to make up for it.

Ingredients 

8 thick slices whole-wheat or regular sourdough bread
1/4 cup light mayonnaise
3/4 teaspoon dried basil, crushed
8 slices (6 ounces) smoked or regular Provolone cheese
1-1/3 cups shredded Gold'n PlumpĀ® Deli Rotisserie Chicken
8 slices ripe tomato
Freshly ground pepper to taste
4 crisp cooked bacon slices, broken in half

Instructions 

Lay bread on work surface. Mix mayonnaise and basil; spread on bread. Layer 1 slice cheese, 1/3 cup chicken, 2 slices tomato, pepper, 2 pieces bacon, and another slice of cheese on each of 4 pieces of bread. Top with remaining 4 slices bread, mayonnaise-side down.

Heat a large nonstick skillet over medium heat (or use a sandwich press). Lightly coat sandwiches with cooking spray.* Cook, two at a time, about 2 minutes. Turn and cook 1 to 2 minutes longer or until golden brown and cheese is melted, pressing down on sandwiches with a spatula as they cook.

Tips 

One Gold'n Plump Deli Rotisserie Chicken yields about 4 cups shredded, sliced, or coarsely chopped chicken, skin and bones removed.

Variations 

*Brush sandwiches with softened butter or olive oil, if preferred.
