Buffalo Chicken Quesadillas

Serve these zesty quesadillas with the traditional buffalo wing garnishes of carrot and celery sticks. For a lightly smoked flavor, toast the stuffed tortillas outside on the grill.

Ingredients 

1-1/2 cups shredded Gold'n Plump® Deli Rotisserie Chicken
1 to 2 tablespoons buffalo wing sauce
4 (8-inch) whole-wheat or regular flour tortillas
1/2 cup thinly sliced red onion
1/2 cup (2 ounces) shredded Swiss cheese
1/4 cup (1 ounce) crumbled blue cheese
Ranch salad dressing, if desired

Instructions 

Toss chicken with buffalo wing sauce in a small bowl until well coated.

Coat one side of each tortilla with cooking spray. Place tortillas, coated side down, on work surface. Top half of each tortilla with onion, Swiss and blue cheeses, and chicken. Fold tortillas in half, pressing gently.

Heat a large skillet over medium heat. Cook quesadillas, two at a time, for about 5 minutes, turning once, until golden and cheeses are melted. Cut into wedges. Serve with dressing.

Tips 

One Gold'n Plump Deli Rotisserie Chicken yields about 4 cups shredded, sliced, or coarsely chopped chicken, skin and bones removed.
