Chicken Cacciatore

This Italian recipe is made with pantry staples, making it an easy last-minute dish.

Ingredients 

3 to 4 (1 pound) Gold'n Plump® Boneless Skinless Chicken Breasts
1 tablespoon olive oil
6 cloves garlic, minced
1/4 teaspoon salt
1/8 teaspoon pepper
1 can (14-1/2 ounces) Italian-style stewed tomatoes with oregano, basil, and garlic
1 can (4 ounces) mushrooms, drained

Instructions 

Place chicken breasts between 2 sheets of plastic wrap or in plastic bag. Using a rolling pin or other flat object, flatten chicken to a 1/2-inch uniform thickness.

Heat oil in a large skillet over medium-high heat. Stir in garlic.

Add chicken and sprinkle with salt and pepper. Cook about 4 minutes. Turn chicken.

Stir in tomatoes (with juice) and mushrooms. Continue cooking for 4 to 6 minutes or until flavors are blended and chicken is thoroughly cooked.

Tips 

This dish is delicious served with angel hair pasta tossed with a little olive oil, parmesan, and olives baked in Cabernet on the side.

 

Variations 

3 teaspoons jarred minced garlic may be substituted for minced fresh garlic.
