Spicy Chicken Pizza

A green salad with pepperoncini, tomatoes, and shredded cheese with an herb vinaigrette round out this tasty pizza meal.

Ingredients 

4 teaspoons olive oil
2 (14 ounces) prepared pizza crusts
8 Roma tomatoes, thinly sliced, patted dry on paper towels
1/2 teaspoon kosher salt
1/4 cup finely chopped fresh basil
1 yellow pepper, thinly sliced
1/2 medium onion, thinly sliced
2 cups coarsely chopped Gold'n Plump® Deli Rotisserie Chicken
2 cups shredded Pepper Jack cheese

Instructions 

Place oven rack in upper third of oven. Heat oven to 450° F. Brush each crust with 2 teaspoons of oil. Place half of tomato slices on each crust, covering crust. Sprinkle tomatoes with salt. Place half of basil, yellow pepper, and onions on each pizza. Top each pizza with 1 cup of chicken. Sprinkle each with 1 cup of cheese.

Place pizza directly on oven rack. Bake 14 to 15 minutes until cheese is lightly browned and pizza is hot.

Tips 

Place a piece of aluminum foil on the oven rack below the pizzas to catch any drips.

One Gold'n Plump Deli Rotisserie Chicken yields about 4 cups shredded, sliced, or coarsely chopped chicken, skin and bones removed.

Variations 

Any flavor of Gold’n Plump® Deli Rotisserie Chicken may be used.
