Chicken & Black Bean Stuffed Tomato

For a fun evening, cover the patio table with a red and white checked tablecloth and matching napkins. To round out the meal, serve sweet potato fries and sweet tea along with the stuffed tomatoes.

Ingredients 

4 large tomatoes
2 cups coarsely chopped Gold'n Plump® Deli Rotisserie Chicken
1 can (14-1/2 ounces) black beans, drained, rinsed
1/2 cup sour cream
1/4 cup finely chopped yellow pepper
1/4 cup barbecue sauce
1/4 cup finely chopped onions
2 tablespoons chopped fresh parsley
1/2 teaspoon finely chopped garlic

Instructions 

Gently cut off stem end of tomato. Using a teaspoon, gently scoop out seeds from tomato. Place tomato upside down on paper towels to drain.

Stir together chicken and all remaining ingredients in a medium bowl. Spoon 1/2 cup of mixture into drained tomatoes. If desired, sprinkle with additional chopped fresh parsley.

Tips 

One Gold'n Plump Deli Rotisserie Chicken yields about 4 cups shredded, sliced, or coarsely chopped chicken, skin and bones removed.
