Tropical Spice Chicken Salad

The flavors of the spicy chicken and the spice in the dressing blend well with the sweet, tropical fruits conjuring up dreams of the Caribbean with sandy beaches and swaying palms.

Ingredients 

SALAD
1 (3-1/2 pounds) Gold'n Plump® Deli Rotisserie Chicken
1 cup small shell pasta
1 can (22 ounce) chunk pineapple in juice, drained, reserve juice
1 mango, peeled and cubed, about 1 cup*
1 papaya, peeled, seeded, and cubed, about 1 cup*
1/3 cup finely chopped red onion
DRESSING
3/4 cup Caesar dressing
1/4 cup reserved pineapple juice
2 teaspoons salt-free steak seasoning

Instructions 

Cook pasta as directed on package, drain. Rinse with cold water and drain well.

Stir together the dressing ingredients in a small bowl; set aside.

Cover and refrigerate at least 1 hour to blend flavors.

Mix together cooked pasta and salad ingredients, Gently stir the dressing into the salad.

Tips 

One Gold'n Plump Deli Rotisserie Chicken yields about 4 cups shredded, sliced, or coarsely chopped chicken, skin and bones removed.

 

Variations 

Any flavor of Gold’n Plump® Deli Rotisserie Chicken may be used.

*2 cups of your favorite melon, berries, or other fruits may be substituted for the mango and the papaya.
