Chipotle Chicken Wraps

Add a little spice to your life with this scrumptious wrap sandwich served with wedges of watermelon and iced tea. These wraps are great to serve at an open house or a graduation party.

Ingredients 

6 tablespoons chipotle mayonnaise*
6 (10 inch) sun-dried tomato or plain flour tortillas
6 leaf lettuce leaves
1 (3-1/2 pounds) Gold’n Plump® Deli Rotisserie Chicken, meat removed and coarsely chopped (about 4 cups)
2 sliced avocados
1/4 cup coarsely chopped white onion
1/4 cup chopped fresh cilantro

Instructions 

Spread 1 tablespoon of the mayonnaise on one side of each tortilla.

Top each with a lettuce leaf. Place about 2/3 cup of the chicken, avocado slices, onion and cilantro down the middle of each lettuce-topped tortilla.

Fold one half of the tortilla over the toppings, then tightly roll and gently press to seal. Cover and refrigerate until serving time.

To serve, cut in half diagonally.

Tips 

*If chipotle mayonnaise is not available, mix 1 tablespoon of your favorite hot sauce with 6 tablespoons of mayonnaise.
