Easy Deli Chicken Lasagna

No-boil lasagna noodles make a time-consuming dish easy enough to make on a week-night. Serve with a chopped romaine salad drizzled with an Italian vinaigrette and lots of hot, crusty bread.

Ingredients 

1 (12 ounce) container cottage cheese
1 egg, lightly beaten
1 cup (4 ounces) shredded Mozzarella cheese
1/4 cup grated Parmesan cheese
1/2 teaspoon dried basil
1 jar (16 oounces) red pasta sauce
1/2 (9 ounce) package no-boil lasagna noodles (8 noodles)
1/2 Gold'n Plump® Deli Rotisserie Chicken, meat removed and finely chopped (about 2 cups)

Instructions 

Preheat the oven to 400°F.

Stir together cottage cheese, egg, 1/2 cup of the mozzarella cheese, 2 tablespoons of the Parmesan cheese, and basil in a medium bowl. Set aside.

To assemble lasagna, spread 1/2 cup of pasta sauce in an ungreased 8x8x2-inch baking dish. Top with 2 noodles. Sprinkle with 1/2 cup of chicken. Spread with 1/2 cup cottage cheese mixture and 1/2 cup pasta sauce. Repeat 3 more times. Sprinkle with remaining 1/2 cup mozzarella cheese and 2 tablespoons Parmesan cheese.

Spray a sheet of aluminum foil with cooking spray and cover lasagna. Bake for 45 minutes. Uncover and bake for 10 more minutes or until lasagna is hot and bubbly. Let stand 10 minutes before cutting.

Tips 

1 Gold'n Plump Deli Rotisserie Chicken yields about 4 cups shredded, sliced, or coarsely chopped chicken, skin and bones removed.
