Lemon Pepper Chicken Lettuce Wraps

The filling of these wraps can also be sprinkled with coarsely chopped peanuts or cilantro. The matchstick-size carrots can be found pre-packaged in the produce section of the grocery store.

Ingredients 

1/2 cup bottled sweet and sour sauce
3 tablespoons soy sauce
1 teaspoon toasted sesame oil
1/2 Gold'n Plump® Deli Rotisserie Chicken, meat removed and coarsely chopped 
1/2 cup (1/2 of 8 ounce can) whole sliced water chestnuts, rinsed, drained and finely chopped
1 cup packaged matchstick-size carrot pieces or coarsely shredded carrot
1/2 cup thinly sliced green onions
1 head (large) butterleaf lettuce, separated into leaves

Instructions 

Combine sweet and sour sauce, soy sauce, and sesame oil in a large microwave-safe glass bowl; stir until well blended. Gently stir in chicken and water chestnuts.

Cover and microwave on high for 3 minutes or until heated through.

Stir in carrots and green onions.

To serve, divide lettuce leaves and filling among four dinner plates. Spoon some filling into a lettuce leaf and enclose leaf over filling.

Tips 

1 Gold'n Plump Deli Rotisserie Chicken yields about 4 cups shredded, sliced, or coarsely chopped chicken, skin and bones removed.
