Spring Greens & Grilled Chicken Salad

This salad of maple syrup, crunchy apple, and sweet-tart dried cherries is equally as at home at a sit-down dinner party as it is at a casual family potluck.

Ingredients 

CHICKEN
3 to 4 (1 pound) Gold'n PlumpĀ® Boneless Skinless Chicken Breasts
1/8 teaspoon salt
1/8 teaspoon pepper
DRESSING
1 cup mayonnaise
1/4 cup pure maple syrup
3 tablespoons white wine vinegar
2 teaspoons sugar
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup extra-virgin olive oil
SALAD
1 bag (5 to 9 ounces) baby greens or other lettuce mixture
1 Granny Smith apple, sliced and coarsely chopped (remove peel if desired)
1/2 cup coarsely chopped dried cherries
1/2 cup sliced almonds, toasted
3 green onions, coarsely chopped

Instructions 

Prepare the grill. Position the grill rack about 6 inches above the coals or heat source.

Season chicken with salt and pepper and grill the chicken for about 6 minutes per side or until thoroughly cooked. Transfer the chicken to a plate. When it is cool enough to handle, cut into 1-inch pieces.

Put the dressing ingredients, except the oil, into a blender or food processor; blend on low or pulse for 30 seconds until mixed. Gradually add the oil while continuing to blend until the dressing is creamy, smooth, and slightly thickened.

Toss the salad ingredients, except about 2 tablespoons of the almonds, with the dressing in a large bowl. Add the cooked chicken and toss gently. Sprinkle with the remaining 2 tablespoons sliced almonds.
