Greek Grilled Chicken Salad

Olive oil, fresh lemon juices, salt, and pepper make up the dressing for this tasty meal.

Ingredients 

CHICKEN
3 to 4 (1 pound) Gold'n PlumpĀ® Boneless Skinless Chicken Breasts
1/2 teaspoon salt
1/4 teaspoon coarsely ground pepper
DRESSING
1/4 cup olive oil
1/4 cup fresh lemon juice
1 tablespoon minced fresh oregano
1/2 teaspoon salt
1/4 teaspoon pepper
SALAD
1 head romaine lettuce, torn
1 cucumber, seeded and coarsely chopped
1 large tomato, cut into 1/2-inch cubes
1 cup feta cheese, coarsely crumbled
1/2 medium red onion, thinly sliced
8 pepperoncini peppers

Instructions 

Prepare grill. Position grill rack about 6 inches above coals.

Place chicken on grill rack over glowing coals. Sprinkle chicken with salt and pepper. Grill for about 3 to 4 minutes on each side or until thoroughly cooked. Transfer to plate and set aside to cool, then slice chicken into 1/2-inch strips.

To make dressing, whisk together all dressing ingredients in large bowl.

Add salad ingredients, except peppers, to bowl. Toss until evenly coated with dressing.

Divide salad among 4 plates. For each serving, place 1 sliced chicken breast over greens and garnish with 2 peppers.

Variations 

1 teaspoon dried oregano may be substituted for minced fresh oregano.
